The Processing Manager is fully responsible and accountable for the day to day running of Fisherman’s Quay’s business, focussing on the Wholesale and B2B operations. They are the focal point of the business and as such will be the key liaison between the fishers, wholesale customers and Directors.

Responsibility for the processing operations:

  • Comprehensive understanding of the product
  • Processing staff’s schedules, organisation and deployment
  • Delegating and monitoring tasks and responsibilities on shift and delivery
  • Cleanliness and maintenance of the premises and delivery vehicles
  • Maintaining accurate records on health & safety to the standards set by HACCP and SALSA
  • Adherence to current legislation in regard to health & safety
  • Service contracts and maintenance of equipment including delivery vehicles

 Recruitment & management of staff:

  • Recruitment following Company procedures, ensuring all staff comply with current visa legislation and relevant qualifications such as driving licences
  • Responsible for training new staff to our standards
  • Developing and building the processing and despatch team on a continual basis
  • Ensure that company policy with regard to staff welfare and discipline is maintained
  • Provide staff with up to date knowledge on products and quality standards
  • Quarterly staff assessments
  • Manage staff holidays
  • Ensure company standards with regard to compliance with HACCP, PPE and personal hygiene are upheld


  • Be the key liaison between Fisherman’s Quay and key customers for daily operations
  • Provide stock information to customers
  • Provide delivery information to customers
  • Answer queries from customers relating to quality, variety, delivery and availability
  • Daily shift briefing where necessary with team
  • Periodic meetings with the fishers and Directors

Financial administration:

  • Responsible for accurate record keeping of fish in and fish out
  • Rota forecast and wages control
  • Check and authorise invoices and fish purchases
  • Provide accurate data on sales, fish purchases and other purchases to the bookkeepers
  • Stock control, inventory, ordering and suppliers of packaging material etc

Building & maintaining good customer relations:

  • Ensuring our standards of quality product and provenance are in place
  • Development of sales opportunities
  • Commitment to the ethos and drive to maximise financial opportunities
  • Maintain customer loyalty, in promoting good word of mouth through Social Media
